Hello,
Is there a way to add custom items and remove items from the Activities menu activated in the GNOME desktop that is activated by hovering the mouse in the upper left corner of the screen ?

Do you mean on the Sidebar? If so, you can remove items and you can add new items to it. Just right click on the item you want to remove. Click the Show Applications to open it and choose the app you want to add to the sidebar, which is called Favorites also.

Not exactly. At the bottom of the sidebar there is the item that opens the big full screen menu of items. That is the area i would like to edit/add to.

Ok, I understand now. Well, it seems one can remove items. I believe it will automatically add items you install, unless it's a command line item, which probably may not have an icon to add. So if your custom item have an icon, you may can drag it to Show Application area. All this is new to me too.
