My apologies for my ignorance, as I am not a programmer at all..

I've tried to uninstall LibreOffice, but to no avail. (I downloaded OpenOffice and installed it, but I can't find it anywhere.) What am I doing wrong?

./setup
and follow the instructions in the OOo installer. You will need to modify the above commands to match the exact names of the OOo version you have downloaded.
This should add OpenOffice to the Mageia main menu (in the "Office" section). You should also see the OpenOffice packages listed if you enter "openoffice" in the "Find" box in the Software Management window.
Note that once you have installed OpenOffice, every time you do a Mageia software update, it will try to replace it with LibreOffice. This seems to be an annoyance we just have to put up with
