Activities (Application) Menu

Is there a way to organize the applications when you select the "Show Applications" icon? I know how to add applications to the favourites so that they show up in the side bar, but I have quite a few applications (about 4 pages) and would like to group them. For example, I am running Oracle Express and the 4 icons for the applications are spread across all the pages.

I'm sure there's a simple way to change from the default menu to the older style with the folders, but I have not found it (sorry if this is a dumb question).

I'm not sure if it's what you want, but have you tried Tweak-Tool - Extensions - Applications menu?
On my mga5 installation Tweak Tool is in the X-Gnome-Utilities sub-menu. You may have to install the gnome-tweak-tool package.
