The differencies between IceCat and Firefox, I don't know them, but according to this (unfortunately) french video :

firefox load by default google as search engine, with the last version it isn't possible anymore to desactivate the search function on the address bar, so it uses google by default and search while typping.
Load "most used website" by default.
On a new tab, it suggests this websites, it make a DNS request for all the "most used website" from the new tab (network.dns.disablePrefetch false by default)
the "addon page" uses GoogleAnalytics, and it is not disabled by all extentions (ublock, umatrix ...) (but by activating "do not track")
The part "Pocket" is not free.

Try "cliqz" in Germany, transform the "search barre" by a "recommandation barre" and the aim is to publish sponsorised content.
Try "DNS-over-HTTPS" (does-it by-pass the local /etc/hosts file ? which restricts some DN on my side), and their partner for the DNS over HTTPS is CloudFlare, I don't know if it is configurable.
