In 7.1 there is a video player simply called "Videos". Nothing shows up in the package manager with that name and there is no help, about, to identify it. It works fabulously and I love it's clean interface! What is the actual name for that program and where did it come from? I'd like to be able to use it in other distros as my default video player!

I believe what you're looking for is totem, the default GNOME video player. Also see https://wiki.gnome.org/Apps/Videos
You can identify the actual program name in the help, as decribed by the first sentence:
Videos, also known as Totem, is an application for playing videos
Cauldron is not for the faint of heart!
